Ingredient labeling for sausage casings

The Food Safety and Inspection Service (FSIS) has published a proposed rule that would require the ingredient labeling of natural or collagen casings used in sausages, hot dogs and other meat products when they are derived from a species that is different from that of the encased product.

For example, if the casing on a beef sausage were derived from a sheep, the label must indicate it is a sheep casing. The issue has religious significance because some religions forbid the consumption of certain species. The proposed rule has been praised by Rabbi David Saperstein, director of the Religious Action Center of Reform Judaism, among others.
