More reminder labels for meat

In the wake of ConAgra Beef Company’s massive voluntary recall of ground beef earlier this summer because of potential contamination with E. coli 0157:H7, some food retailers began reminding their customers that cooking ground beef to 160°F kills the bacteria.

In a letter to its members, the Food Marketing Institute said it had created a label stating “Cook to 160°F to kill bacteria” that can be placed on ground beef packages. FMI noted that consumer research indicated that consumers prefer messages directly on the product. Or, the message could be added to the price label, FMI said.

Artwork to produce such labels is available on FMI’s Web site (www.fmi.org/ foodsafety,) or labels can be ordered directly from FMI. FMI’s Food Safety Team worked with USDA in managing the recall.
