Sodium nitrite is a key ingredient in cured meats to prevent the growth of organisms that cause botulism. GMA argued that data from the Environmental Protection Agency used by OEHHA is flawed and does not meet state scientific standards to qualify for the warning label list. Both GMA and the America Meat Institute also challenged EPA's analysis of sodium nitrite. c These and other meat products could be affected by newly introduced country-of-origin front-panel labeling legislation.
