"Light" Chinese pastries require "light" packaging...

In Vancouver, British Columbia, a Chinese baker caters to a wide variety of customer tastes.

Ron Cheung serves Chinese specialties alongside New York cheesecake and sponge cake made with Dutch chocolate garnished with Callebaut Belgian-chocolate sprinkles. While Cheung prefers Chinese baking because it's lighter and not-too-sweet, he says "Chinese bakeries have a tendency to over-package their goods." He says he's trying to "wean customers off 'pretty packaging'. . . to make his environmental footprint as light as the desserts he sells."
