First NSF Approved Edible Ink Printer

Baking Betty’s, located in Minnesota’s Mall of America, utilized Primera Technology’s Eddie,™ The Edible Ink Printer to meet high demand for personalized cookies.

Eddie,™ The Edible Ink Printer from Primera, prints full-color logos, photographs and text directly onto the surface of cookies, lollipops, macaroons, white chocolate toppers, and other confections. Holding up to twelve 3.5” (90mm) cookies on a circulating tray, each cookie is automatically drawn into the printer one at a time. The printer then prints directly onto the surface of the item, rotates, and feeds and prints the next cookie.

According to Baking Betty’s founder Emily Osterberg, the company was receiving a high volume of requests for custom logo cookies, and custom images on cookies. Prior to purchasing the Eddie™, Baking Betty’s was using edible frosting sheets that had to be printed individually and peeled off one by one.

Osterberg said that after researching and trying different products to find the best solution, they decided on the Primera Technology printer. “With the Eddie” said Osterberg, “it just is a better-quality product, it saves us a ton of time because you're actually printing right to the cookie. The turnaround time to package, it's huge for us. It's very important that it's a stainless steel, food grade printer. It's very easy to use so you can just pop the cookies right onto the Eddie,™  and take them off. It's easy to clean, and it's just a very seamless process…you would never be able to tell that this is printed with edible ink on a cookie.”

The print head and all inks for the Eddie,™ are certified as GMP components. The Eddie,™  is also the first and only edible ink printer ever approved by NSF®, a USA-based company that certifies items used in food preparation, including tables, cookware, machines and other devices for use in food service.

A recent Baking Betty’s project for 800 logo cookies was the first time the company tackled that size of a project with the edible ink printer, and according to Osterberg, “it went super smooth, such an amazing process. Every single cookie - all 800 - looked exactly the same, the images were crisp and perfect.”

Primera Technology is also designing and manufacturing an automated, desktop direct-to-cookie printer for cookies, candies, chocolates, macarons and more. Users will include bakeries, candy makers, caterers, food service, event planners and even amusement parks.
