Gourmet restaurants from NYC to LA are no longer serving bottled water. The negative image of bottled water and the negative impact of bottled water on the environment are cited as main reasons for the change. Restauranteur Joe Bastianich (who partners with Mario Batali) says, "The argument for local water is compelling and obvious. . . It's about transportation, packaging, the absurdity of moving water all over the world."
