Freezer-to-oven CPET trays

A thermoformed tray of crystallized polyethylene terephthalate holds frozen, unbaked muffin batter and can be put right in the oven to allow foodservice operators in Australia to offer fresh-baked goods on-premise.

Bakels Bake-Off, which produces the frozen batter in Sydney, packs muffin dough into 4-, 6-, and 12-count black glossy CPET trays. They are then topped with locally sourced clear, snap-fit PET lids. After cryogenic freezing at Foodservice operators remove the lids and place the trays from the freezer directly into 200°C (392°F) conventional ovens. The trays, which resist melting, distorting or cracking, have been in use for about a year. The trays permit Bakels' customers, such as BP Express stores and Coles supermarkets, to offer consumers fresh, baked-on-premise products without the expense of running a full-scale bakery operation, according to Bakels sales manager Kevin Dryland. Neither account offered baked-on-premise products previously. The trays coded with Australia's equivalent to the "1-PETE" resin recycling code, are recycled by some users. Future plans for the packaging call for a retail version for consumers, says Dryland.
