Although acrylamide has been listed under Proposition 65 as a carcinogen since 1990, only within the last 3 years have researchers discovered acrylamide in some foods cooked at high temperatures. Under the law, “bounty hunters” who identify violators of the law can share in any penalties assessed, provided alleged violators and law enforcement officials have been duly notified.
