'Breakthrough' pasteurization technology for chilled ready mealsAt Anuga FoodTec, Hakan Pettersson, managing director of MicVac, describes what he calls a “breakthrough innovation technology” for chilled ready meals. The MicVac process allows raw or partially pre-cooked ingredients to be microwave-pasteurized in-pack. The process is said to allow for greater product quality, color, taste, texture, vitamin content, and shelf life.
