Yak ice cream?
FDA is considering a petition by the International Ice Cream Association to update the 30-year old Standards of Identity for ice cream. Ice cream manufacturers want more flexibility to use new technologies and ingredients.
But critics primarily from the U.S. dairy industry warn that it could lead to the use of milk from animals other than cows such as water buffalo (which accounts for 90% of India’s dairy industry). IICA’s petition calls for clear labeling of any “exotic” milk but the rules for powdered milk are less clearcut.
